Scottish Cranachan
This traditional Scottish chilled dessert mixes honey, toasted oatmeal whipped cream, whisky and raspberries. It's ideal for Australian summer entertaining.
Ingredients:
570ml Double Cream
85g Medium Oatmeal
7 tablespoons Whisky (Scotch Whisky of course)
3 tablespoons Honey
450g Fresh Raspberries
Fresh Mint to Garnish
Method:
Lightly toast the oatmeal in a frying pan. Be careful not to burn it.
Lightly whip the cream until you reach soft peaks and then fold in the oatmeal, whisky and honey. Once these ingredients are mixed, fold in the raspberries. Leave a few raspberries to sit on the top.
Spoon into dessert glasses and place in refrigerator to set. Serve with the remaining raspberries and mint.
