Honey Ginger Muffins

– serves 6

This recipe for Honey Ginger Muffins makes excellent use of the great combination of spicy ginger zing with natural honey sweetness. It's a very simple recipe that takes about 40 minutes from start to finish. Best eaten warm, honey ginger muffins are an ideal component of a winter's day afternoon tea.


Ingredients

150g plain flour
½ teaspoon baking powder
Pinch of salt
¼ cup of honey
Heaped teaspoon of ground ginger
1 egg
1 teaspoon vanilla extract
50mls milk
50g butter melted and cooled
100g naked ginger*, chopped

 

Method

Dry ingredients – sift the flour into a large bowl and add the baking
powder, salt and ground ginger.
Wet ingredients – mix together the butter, egg, milk, honey and vanilla
extract.
Sift the dry ingredients into the wet ingredients and fold lightly together
Add the chopped naked ginger and mix, but do not overmix.
Spoon the mixture into muffin cups – ¾ full.
Bake on a high shelf at 165 0 C in fan assisted oven, for 25 – 30 minutes.
Place muffin tray on a rack and allow to cool before removing muffins.

Special Notes

Honey easily burns – watch out for muffin tops scorching.
Naked ginger can be chopped finely or coarsely – it depends upon your
liking for bursts of ginger flavour.

Optional Lemon Glaze

1 cup icing sugar
2 tablespoons lemon juice
Mix together and spoon onto muffins

* Naked Ginger from Buderim is ideal. If you can't get Buderim Ginger you can substitute glace ginger from the supermarket.
