Honey Soy Chicken

This recipe is a very quick to prepare meal. It blends honey sweet with the salty soy sauce and savoury garlic and ginger. Kids love it.

Serves: 3-4

Ingredients:

750gm chicken thigh fillets
2 tablespoons oil
1 teaspoon roasted sesame oil
3/4 cup dark soy sauce
4 tablespoons honey
2 tablespoons Chinese wine or dry sherry (optional, but lifts the flavour)
2-3 cloves garlic, crushed
1 teaspoon finely grated fresh ginger

Method:

Cut chicken into bite size pieces (this recipe is traditionally done with chicken wings, but thighs are less fiddly and cook faster). Put chicken, honey, sesame oil, Chinese wine and soy into a mixing bowl and mix thoroughly. Leave to stand for 5- 10 minutes while you prepare the rest of the recipe.

Heat oil in a wok or deep frypan, add the crushed garlic and ginger. Sauté on high heat until just starting to brown. Add the chicken mix and stir thoroughly through the garlic and ginger. Reduce heat and stir frequently until the chicken is cooked through, about 5 minutes. If you cook it too hot, the honey will burn.

Serve with steamed rice and lightly steamed seasonal greens.
